Jeff’s Lazy Pizza

Hi everyone!
For years our family has had a dinner ritual saved for those last minute, winging it nights. We always keep a frozen pizza and fresh veggies on hand… So why not combine the two to make a quick & healthy snack or dinner?  With Jeff’s magical spin on it, our family pizza is super flavorful and one of the most popular meals he now makes.
With so many of you asking if we would share the recipe after Jeff made it during an Instagram story one night we decided to add it to the blog.

Jeff’s Lazy Pizza

Serves up to 3 people

Ingredients:

1 Newman’s Own pepperoni Thin & Crispy Pizza Frozen
(our favorite for the crispy crust and because they donate 100% of profits to charity… NOT sponsored)

1 1/2 Bell pepper – Type/Color your choice

1/2 Poblano pepper

1 1/2 cups broccoli florets

1/4 White onion

1 garlic clove minced

1 1/2 Tbs Balsamic vinegar

Salt, pepper and olive oil to taste

Preparation:

Pre-heat oven to 475°.
Note: I cook the pizza at a higher temperature due to the extra vegetable toppings

Veggies ~ 

Bell pepper: Cut off both ends and remove the seeds. Slice into small rings and then chop into small pieces

Poblano pepper: Cut off both ends, slice in half and remove seeds. Dice 1/2 of the pepper into small pieces.

Broccoli florets: Remove stems and dice into small pieces

Onion: dice 1/4 of the onion into small pieces

*Combine chopped vegetables, minced garlic and balsamic vinegar in a bowl and mix thoroughly adding salt, pepper and olive oil to taste

*Drain any excess of liquid from the vegetable mixture and add to the top of the pizza. This is important as extra liquid can make the pizza soggy.

*Since the vegetables can drip liquid during the cooking process, I suggest placing a pizza or baking pan on the bottom shelf of the oven.

Place the pizza directly on the middle rack of your oven and set your timer for 20 minutes. Check pizza after 18 minutes as your cooking time will vary depending on your oven. Usually 18 to 22 minutes will work depending on how well done you like your crust

Remove the pizza from the oven, slice into six pieces and enjoy with your favorite beverage

    1. Thanks Kristen, I’m so glad Jeff thought of this. I love pizza and now I can eat it without feeling so guilty.. the veggies fill you up so much, you can’t eat more than 2 pieces!

  1. Thanks for sharing what may seem like a “duh” recipe but isn’t! I have tried to add extras to frozen pizza without success over the years or ended up with soggy pizza- ugh! Will give this a try.

    But love vegetables and Pepperoni.
