Maybe this was my parents way to gain another 15 minutes of calmness in the house because if there was dessert around you could be sure all of the kids would calmly eat and not cause trouble… Ha.

My favorite desserts have always been Ice Cream, Cheesecake and Apple Cobbler. Cheesecake is awesome, but the combination of ice cream and Cobbler is just out of this world! Kristy, on the other hand, lives for everything lemon or chocolate related. Me on the other hand? Anything to do with apples.. I’m all over it.

Today I am excited to share my Apple Oatmeal Crisp (cobbler). It’s easy to make, can be modified to feed any number of family members/guests, and the best part is you can make it in advance. I tend to make this dessert whenever we have an abundance of apples and everyone in the house is craving something warm and sweet.

Hope you enjoy this recipe, as much as we do. This is the first time that I’ve actually measured and written down what I use. This has always been a “winging it” kind of recipe for me. Sometimes I like it with more apples and other times it’s all about the crisp factor.

Ingredients:

5 – 8 medium Granny Smith Apples
1 cup Light Brown Sugar
1 Cup Quick Oats
1 Cup All Purpose Flour
1/2 Cup Butter – Melted
1 tsp vanilla

1/2 Cup White Ganulated Sugar
1 1/2 TSP Ground Cinnamon

9″ x 9″ baking dish

Preparation:

Pre-heat oven to 350 degrees

Apple Prep:
Peel, core and dice apples into small bite size chunks.  I like to use an apple slicer in this step which will easily core the apple and create small slides.  I then peel and dice each slice. Put them in a bowl and set aside.

Tip: If you think it will take more than 15 minutes from this point to complete the prep, fill the bowl of apples with cool water to keep them from turning brown, but remember you MUST drain this water before you add to the crumble later!

Crumble Prep:
In a medium bowl, combine brown sugar, oats, flour, vanilla and butter. Mix gently with spatula 3 – 4 minutes until all ingredients are combined. Note, if you use unsalted butter, then you may want to add a small amount of salt to taste.

Last night I picked up this great white baking dish on sale. It’s the perfect size for my family. They have several different sizes and colors! I also found a similar blue spatula set.

Build the Crisp:
Place half of the crumble mix in the bottom of the baking dish. Add apples (drain first if you placed them in water!), sprinkle white sugar and the cinnamon evenly over the top of the apples, no need to mix, then add the remaining crumble mix on top.

Bake and Serve:

Bake in a 350 degree oven for 55 – 60 minutes

Serves 4 – 5

If you are baking for a larger group, you can either add a few apples to the recipe above or double the recipe and bake in a 9″ x 13″ baking dish for 1 hour and 15 minutes.

Although this crisp doesn’t need ice cream, a scoop or two on the side can only make it more enjoyable!

By the way – Apple crisp is one of those recipes that can have a million twists.. this is just my simple version when we are wanting something quick and easy. There are lots of other ingredients that we add to the mix at times – lemon, cranberries, and more. So feel free to add anything you’re in the mood for.

  3. This looks so delicious Jeff and Kristy! We love apple crisp. I had a bunch of apples that needed to be used up shortly after the holidays and we made an apple crisp and I added some blueberries and cranberries to it and a few chopped pecans. I was trying to use up things left over from all of our holiday baking. We also had left over creme fraiche so I tried a dollop of that on the warm crisp, It was pretty yummy! I can’t wait to try Jeff’s recipe and will make it when my hubby gets back from his business trip. Thanks for your recipe! Your photos are beautiful, too!

    1. Hi Angela, Jeff mixes the vanilla in when he’s making the oatmeal crisp. He adds it at the same time as the butter. Hope that helps? :) xx

  10. My apple crumble is baking right now. It smells really good. I think my apples were much larger than yours. I am doing pickup grocery so I don’t select things myself. I have been diagnosed with a type of pneumonia. I was sick for 2-1/2 months before reaching this diagnosis…covid tests,etc. so I have been frightened and worried. You and Jeff have helped me take my mind off things. Thank you. I made the shrimp poloma also. It was delish! The ease of it with the frozen shrimp is a no brained though it never occurred to me! Anyway…thank you both!

    As mentioned in the notes, adding vanilla is left off the recipe card. Also, you might want to consider adding lightly buttering the inside of the baking dish in both the recipe main body and on the recipe card.
